Our organic Matcha Akashi is the most popular Matcha variety and corresponds to the former Ceremonial Matcha Hikari. It has a rich aroma with fruity notes and combines all the qualities of a good Matcha: mild, delicate-bitter, gentle, sweet and pleasantly harmonious. The name Akashi means “shine” and is reminiscent to the bright green color of our Matcha Tea. This Matcha is the ideal drink for a daily use.
Matcha can be prepared not only as a tea, but offers a variety of possibilities for use in the kitchen. Refine desserts such as ice cream or cake with a Ceremonial Akashi and give it a special kick in your smoothies and drinks. Let yourself be inspire from our delicious recipe variety.
To prepare Ceremonial Matcha Akashi, boil fresh and preferably soft water. Let the water cool to 80°C (for example, by pouring the water back and forth between cups three times or by opening the kettle and waiting 10 minutes). Place 1 gram of Izumi matcha (two bamboo scoops or half a tea spoon) in a matcha bowl. Whisk the matcha for about 15 seconds until frothy using the bamboo whisk.
